Apple Sweet Potato Pancakes

I woke this morning to the sound of a noisy garbage truck at 5:30 a.m. Yes 5:30 am!! What is up with that?! Normally they come about 6:30 a.m. on Fridays - but when there's a Monday holiday they come on Saturday. But 5:30 a.m.?!

It's a cool and rainy Saturday - a perfect morning for PJ's and pancakes. We had a playdate lined up at 10am, so I had plenty of time to clean downstairs and take a shower before Isaac woke up with time to spare for lounging in our PJs and making breakfast.

I had seen an interesting pancake recipe in Jessica Seinfeld's "Deceptively Delicious" cookbook awhile back that contained sweet potato puree.  I actually had a bag of frozen mashed sweet potato leftovers that I'd been saving to find a recipe, so I thought I'd go partially on memory & just wing it and see what happened.  Here's what I came up with.....

Apple Sweet Potato Pancakes

1 1/4 Cups Pancake Mix (Just-add-water type)
1/2 Cup mashed/pureed sweet potatoes*
1 - 2 tsp. Cinnamon
Dash of Nutmeg
1 tsp. vanilla
1 tbsp. canola oil
1 cup water
1 cup Mott's Healthy Harvest Granny Smith Applesauce
2 Tbsp Wheat Germ

*Sweet Potatoes - (cut in cubes, boiled till soft. Mashed/Pureed. Nothing added).
Mix all ingredients together. Batter will be lumpy. Spray nonstick spray on griddle, heat to high. Pour batter onto pan, let cook until bubbles form, and carefully flip over. Do not press pancakes down or flatten...Serve warm with your favorite syrup.

They turned out very moist and delicious! I used 1 tsp Cinnamon...Next time I'm using 2 tsp. of Cinnamon - because I like a more bold Cinnamon flavor. I like the Granny Smith applesauce because it's so flavorful and tart - plus Motts Healthy Harvest is no sugar added! This made 7 good sized pancakes so we had leftovers to freeze for tomorrow.
